Put those tongs away. Fool Mudammas is a stacked bean salad that doesn’t require any mixing to deliver delicious layers of flavor. The proportion of this recipe works perfectly as an appetizer for up to four dinner guests, or as a filling meal for one.


FOOL MUDAMMAS

Ingredients 

  • 1 can fava beans, drained and rinsed
  • 1 tsp garlic powder
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 4 TBL green onions, chopped
  • 5 heaping TBL tomato, chopped
  • 4 TBL parsley, chopped
  • dash of salt
  • drizzle of olive oil

Directions:

Place fava beans in a clean bowl and sprinkle with garlic powder, lemon juice, and olive oil. Cover tightly in plastic wrap and microwave for 1 ½ minutes on high.

Remove plastic wrap and transfer into a cool bowl.   Mash approximately 80 percent of the fava beans using a fork, leaving a few of the beans whole. 

Use the back of a spoon to smooth the beans into an even bottom layer. Spread chopped green onions over the entire bean layer, then layer the tomatoes, followed by the parsley. Sprinkle a dash of salt over the top, then drizzle with olive oil. Serve with pita bread as an accompaniment.
