This isn’t your run-of-the-mill side salad. This is Fatoosh—a vegetable packed, Toasted Pita topped salad that only requires a mixture of spices and olive oil in the way of dressing. A signature element of this composed salad is the special cut of each vegetable, which ensures the perfect blend of crunch and tang in every bite. You can add chicken or salmon for an extra punch of protein.


FATOOSH

Ingredients 

  • ½ of a large white onion, peeled
  • 2 cups iceberg lettuce, chopped
  • 1 cup parsley, chopped
  • 1-2 medium tomatoes, cut into small wedges
  • 1-2 small cucumbers, cut into thin slices
  • ½ of a green bell pepper, cut into thin slices
  • 1 tsp garlic powder (can substitute with fresh chopped garlic at same proportion)
  • 1 tsp sumac 
  • 1 TBL Zahtar 
  • ¼ tsp black pepper
  • ½ tsp salt
  • 6 TBL fresh squeezed lemon juice
  • ¼ cup olive oil

Directions:

Slice onion in half, then make straight cuts in a downward motion. Combine lettuce, onions, tomatoes, peppers, cucumbers, and parsley in a clean bowl.

Sprinkle vegetables with garlic powder, sumac, Zahtar, salt, and pepper, then pour lemon juice and olive oil over the top. Break a medium-sized toasted pita into large pieces over the top of the salad mixture. Use your hands   to toss the salad in a lifting and rolling motion, starting at the bottom of the bowl and moving upward, for 30 seconds. As you’re tossing, feel free to taste as you go and add additional spices according to taste. Let salad sit for a few minutes to allow flavors to meld together, then transfer to a serving dish and enjoy. Serves 4.
